Who's ever heard of quinoa? Pronounced "Keen-wah". It was one of the three main foods eaten by the Incas. Corn, potatoes, and quinoa. Quinoa is a whole-protein seed, substituted often for a grain. It is gluten free, and cooks in the same manner as rice. It is good in stews, casseroles, soups, stir fry, and salads. It can be roasted before cooking, or even popped kind of like popcorn and eaten dry as a cereal... interesting little super-food!

my family LOVES Quinoa. we use it in lieu of couscous when eating east indian, also add it to my barley soups so i can cut the barley in half.
